Smoked Black Beans

Vegan

These delicious beans will complement any meal, but especially Mexican inspired dishes.

All the combine flavors make it enjoyable but the Smoked Paprika is the star!

Ingredients:

  • 2 cups dry , or 1 can Black Beans

  • 6-8 cup Water ( if dry, if you’re using canned beans follow the cooking instructions on the can)

  • 1 tsp Avocado Oil

  • 1 Tbsp Sea Salt (to taste)

  • 1 Tsp Ground Black Pepper ( to taste)

  • 1-2 Tsp Oregano

  • 1 Tsp Coriander

  • 1/2 Tsp smoked paprika

  • 2-3 cloves of garlic ( minced)

  • 1/2 Tbsp Lime Juice

  • 1/2 small onion

  • 3 Tsp of finely chopped cilantro

  • Diced tomatoes ( optional for garnish)

Preparation Instructions:

  1. Rinse and sort beans. 2 cups off beans 6-8 cups of hot water. ( I used two cups for the recipe)

  2. Boil 2 minutes

  3. Remove from heat , cover with lid and let stand for 1 hour or let beans stand overnight to soak

Directions:

  1. Bring 6-8 cups of water to boil

  2. Add rinsed beans, bring it back to boil, and then reduce heat and simmer

  3. Simmer until desired tenderness 1-2 hours

  4. In a saucepan add oil, Sauté onion until translucent, add garlic cook until fragrant

  5. Add Garlic and onions to cooked beans

  6. Add Oregona, salt, smoked paprika, coriander and pepper, cook for an additional 2-5 minutes

  7. Add lime juice, cilantro and diced tomatoes ( optional)

  8. Serve immediately

Facts!

Smoked paprika—also known as pimenton, smoked pimenton, and Spanish paprika—is made by first slow-roasting peppers over an oak fire before grinding them into a powder. This process imparts a strong smoky flavor to the final spice. Smoked paprika is commonly used alongside other potent condiments such as hot sauce
